Hey friends – real talk, it’s been a very full week around here, and we have family in town to help celebrate our son’s birthday (!), so I’m going to skip the chit chat and get straight to the good stuff (ie, today’s fab new recipe). I’ll be back next week with another new seasonal recipe, some helpful fall gardening tips, and hopefully I’ll be able to share an update from my barn makeover project! For anyone who isn’t quite ready to say goodbye to summer, this recipe is for you.
Bright cherry tomatoes, juicy sweet corn, fragrant basil, and creamy + salty goat cheese… honestly, is there anything better? This is a straightforward salad that you can whip up in about 10-15 minutes, but what makes it extra *special* is the cumin-lime vinaigrette.
While I was coming up with this recipe, I realized I’d never made a vinaigrette quite like this one, and I love how the fresh lime juice and cumin magically heighten the flavor of the summer veggies. I purposefully wrote this recipe so you’ll end up with extra vinaigrette, and you can (and should!) keep the leftover vinaigrette in a jar on your counter and use it to dress any other salads you may be making this week.
Next Friday I’ll be fully in fall mode, but for one more week, I’m hanging on to summer… who’s with me?!
