If last week was a total hot mess, then this week has been a relative walk in the park, with the farm finally humming along like a well-oiled agrarian machine. We were able to get replacement plants for the ones that arrived damaged last week, and another big batch of plants arrived on Wednesday, which we’ve been hustling to get in the ground. Things. Are. Looking. Up!
Yesterday alone, with the help of an incredible crew of ladies, we got thousands of veggies/herbs in the ground.. fennel, lettuces, broccoli, onions, parsley, dill, cilantro, etc. Our Spring CSA starts in less than a month, so planting is pretty much non-stop at the moment, so we can be ready to start slinging veggie boxes out the door each and every week.
While the days have been warm, it’s still pretty chilly in the evenings (often hovering around freezing), which means a lot of covering and uncovering all the rows with frost cover to keep them protected.
I’ll be honest, the covering/uncovering shenanigans are my least favorite thing about farming in the spring… it’s very time consuming, difficult to do without another person helping, and on windy days trying to wrangle long sheets of fabric is a literal nightmare. Alas… soon enough, the threat of frost will be gone, and THEN we will have the pleasure of North Carolina’s ridiculously hot and humid summers. Oh, the things we do for our plants!

Crispy, buttery potatoes, dusted with heaps of parmesan cheese, and dipped in a herby, lemon-y, garlic-y yogurt sauce… I mean, what more could you ask for?!
The secret to this recipe is cooking the potatoes two ways: first by par-boiling them in salted water until tender, and then smashing and roasting them in a hot oven until crispy and golden. The extra step is 100% worth it, and once you cook potatoes this way, you won’t go back!
This makes a great hearty veggie side dish, and would be excellent paired alongside a juicy roast chicken, grilled steak, pork, lamb, fish… LOL, I guess what I’m saying is this will literally compliment whatever else you’re eating, so go nuts people.
