This week started with temperature lows in the 20’s, and it’s ending with highs in the 80’s… welcome to spring in North Carolina! Yesterday, I was maybe a little *too* eager to work outside all day rocking just a t-shirt, relishing in all the sunshine, and I promptly got my first sunburn of the season... whoopsieee.
Yesterday also marked the first (very small) harvest of the season, as I was able to pick a few bunches of kale, chard, leeks, and edible flowers for a local chef. I’d forgotten how much I love harvesting… it is such a satisfying and tangible act, getting to literally pick the fruit of your labor, especially after a long winter devoid of green things.
Just keeping it real with y’all… this week’s update (and this week’s recipe) are going to be short and sweet, as we have a wildly busy weekend ahead. Tomorrow I’m hosting our first (sold out!) workshop of the season, Home Gardening 101, and I can’t wait to have folks back out to the farm to explore and learn together. And on Sunday we’re hosting a group of local pre-schoolers and their families for a family day on the farm. Ready or not, spring is in full swing around here!

I know, radishes can be a tough sell. But hear me out. Even if you think you don’t like radishes, pretty please give this recipe a try and see if I can change your mind.
Radishes are one of the first veggies ready for harvest in early spring, and I love how beautiful, colorful, and versatile they are. Not sure what to do with radishes? Roast them! Dip them in salted butter! Shred them for a spicy slaw! OR saute them in a super quick + delish miso honey butter sauce (aka the recipe for today).
This recipe only has 5 ingredients, comes together in about 10 minutes, and hits all the notes you want – sweet, salty, and savory. Any kind of radishes will work, though you could also use hakurei/salad turnips instead if that floats your boat.

Glazed Miso Honey Butter Radishes
Serves 4-6
INGREDIENTS
2 tablespoons yellow miso paste
2 tablespoons room temperature butter
1 tablespoon honey
2 bunches of radishes (about 1lb)
Kosher salt and freshly ground pepper, to taste
PREPARATION
Stir together 2 tablespoons of yellow miso paste, 2 tablespoons room temp butter, and 1 tablespoon honey in a small bowl and set aside.
Wash your radishes well, remove any tops, and slice each radish in half. A note that when removing the tops, I like to leave a little bit of the green stem attached… I think it makes them extra adorable (but maybe that’s just me?!)
Heat up a large skillet over medium-high heat and add the radishes to the skillet along with the miso honey butter mixture.
Cook, stirring often, until the radishes are tender and most of the liquid has evaporated and turns into a nice glaze, 5-8 minutes (or if your radishes are extra big, they may need a bit more time). Be careful not to overcook the radishes to the point where they are mushy… you still want some bite/firmness to them!
Taste and adjust seasoning as needed. Serve warm and enjoy!
