After the deluge of rain we received last week, this week we’ve been focused on keeping up with all the veggies (and weeds!) that have hit a major growth spurt. That means daily harvesting of zucchini, cucumbers, tomatoes, eggplant, okra, peppers, etc – plus non-stop pruning and trellising as the plants keep growing like crazy.
Oh, and these blackberries absolutely CAN’T STOP WON’T STOP (not that I’m complaining)! Because this is the first year of fruit for our blackberry plants, I have no idea how long the harvesting window will be… so far, we are 4 weeks into harvesting and there are NO signs of stopping. Which means our CSA members have been lucky recipients of berries in their boxes every week, plus lots of berry baking and freezing happening in my own kitchen, and literally anyone who steps onto the farm has no choice but to leave with several pints full.
So as we head into July, we’re entering a season of ultimate summer abundance, but it’s also a small window of time when things quiet down (a little!) around here. At this point, all of our summer crop successions are in the ground, and there won’t be any major planting pushes until the end of August as we prepare for fall. It’s a welcomed opportunity to catch our collective breath, which is especially appreciated as we hit peak summer heat + humidity.
In honor of all the summer abundance (and just in time for the Fourth of July holiday), this week’s recipe is a Summer Berry Galette, which is super adaptable so you can use whatever combination of berries you have on hand. Keep reading for the full recipe!
A galette, aka a rustic pie, is the ideal vehicle for wrapping up juicy, sweet summer fruits for a perfectly imperfect dessert. I am *not* a technical baker (I really can’t be bothered with super exact measurements and finicky instructions), so galettes are my go-to recipe for enjoying the fruits of the season.
This Summer Berry Galette recipe can be adapted for whatever berries you have on hand (I most recently used blackberries with a few blueberries thrown in), so just use whatever you’ve got!
Galettes are best after sitting for an hour or two (allowing all those delish juices to settle and firm up a bit), so they’re a great make-ahead dessert for summer dinner parties …4th of July BBQ, anyone?! All you need is a big scoop of vanilla ice cream (or whipped cream) to top it all off, and you’ll be in summer berry heaven.
