We’re still in the depths of #rootcellarseason (aka the months of January & February when we’re living off all the hardy root veggies, winter squash, etc that were harvested last fall and stored away for the winter), and I’m getting a liiiittle tired of seeing the same veggies over and over again. Which means I’m always looking for new ways to spice up winter veg as we wait for our spring garden to get going.
Enter this recipe for sweet potato & carrot mash topped with an arugula pistachio pesto, which hits all the right flavor notes – it’s bright and herbaceous, with a touch of sweetness and just the right hint of acidity (thanks to a splash of apple cider vinegar). You don’t technically *have* to make the arugula pistachio pesto, but it definitely kicks everything up a notch, and tastes good on literally everything. This mash makes a great side dish that comes together super easily + quickly, and it would pair especially nicely with a juicy roast chicken, some grilled sausage, and/or a nice salmon fillet.
