Hello from the beach! This week was a short one at the farm – we hustled to get our CSA shares out on Tuesday, and the minute those veggie boxes were out the door, we hit the road for the Outer Banks, where we’ve been spending a much needed week away with family.
I’ve learned pretty quickly that beach vacations are a whole different vibe when you have young kids – aka no more sleeping in past 6:30am or spending the whole afternoon leisurely reading a book and just watching the waves – but there’s a different kind of joy that comes from seeing your kids experience the power of the ocean, dig and play in the sand for hours, and eat watermelon until the sticky juice dribbles down their cheeks and arms. (It’s also way easier to have fun at the beach when you have grandparents and aunts and uncles around to lend a hand.. it takes a village, and we have the best one!)
So I’m keeping this part of my weekly note abbreviated today, so I can get back outside into the sun and sand, but *don’t stop reading* because this week’s recipe is one of my absolute favorite summertime, beach / crowd friendly dishes – a savory Tomato & Sweet Corn Galette.
If you’ve been following along with me this summer, then you already know that I *love* a galette (aka rustic, perfectly imperfect pie).
So yeah, I’ve yet to meet a galette that I don’t like, and today’s recipe for a savory tomato & sweet corn galette oozes with summer goodness. There really aren’t many ingredients – a yellow onion, some sweet corn, a few tomatoes, fresh basil – so get the juiciest, sweetest ears of corn and the ripest tomatoes you can find, because the quality of your ingredients is key… we’re here to eat like farmers, after all!
